Here is how you make Scalloped Potatoes, Vegan:

Clean & trim potatoes and cook until just done but still with body. Drain but save water. Allow to cool until can handle comfortably. Cut onion into thin slices and separate rings. Prepare gravy. Place water and remaining ingredients in blender and liquify. Heat in sauce pan striring constantly until comes to boil. Remove from heat. Slice potatoes in about 1/4 inch slcies. Layer the sliced potatoes, the sliced onions and the gravy in a sprayed bake dish ending up with gravy on top.
