Here is how you make Annabel Karmel Vegetable Burgers:

Microwave or boil potatoes in skins until soft and set aside to cool. Meanwhile heat the olive oil in a frying pan and saut? the onion, leek, carrot, mushroom, garlic and thyme for 10 minutes, stirring occasionally until the vegetables are soft. Make sure the mixture is quite dry and leave to become cold. Peel the potatoes and mash lightly with a fork. Add the cold veggies and remaining ingredients except for the oil and flour.
