1 Boca Tomato-Basil vegetarian burger, crumbled
1/2 C fat free cottage cheese
1/4 C fat free mozzarella cheese
2 TBL reduced fat parmesan cheese
2 oz reduced fat or fat free feta cheese

Here is how you make Vegetable Strata:

Pre-heat oven to 4001. Use a vegetable peeler to make thin ribbons of squashes. Sautee lightly with Greek or Italian seasoning. Layer in bottom of a baking dish, spreayed with Pam. 2. Sautee peppers and mushrooms the same way and layer into squashes. Follow veggie burger crumbles the same way. 3. Spread cottage cheese over vegetables, sprinkle with seasoning, add crumbled, sauteed veggie burger, capers, olives and layer sauce over whole thing. 4.
