2 cups chicken broth
1 onion
6 cloves garlic
1 medium zucchini chopped
1 medium summer squash chopped
1 medium ear of corn
1 roasted red bell pepper
1 tbsp oregano
1 tbsp basil
1 pinch of salt
1 pinch of black pepper
1 pinch of chili pepper
1 tbsp olive oil
2 tbsp lemon juice

Here is how you make Quinoa and Summer Vegetable Medley:

Start by rinsing and then cooking the quinoa in the chicken broth. Set aside when done, covered. Chop up the onion, zucchini, summer squash, garlic and the bell pepper. Chop the baby spinach coarsely and set aside. Heat the olive oil in a large pot then add all the vegetables except the spinach and coat evenly with oil until the vegetables are soft and caramelized. Add the oregano, basil, salt, pepper, chili powder and stir. Lastly add the lemon juice and the spinach.
