Add shrimp and shallots; stir-fry 3 minutes. Remove mixture from skillet; keep warm. In same skillet, heat remaining 1 tablespoon oil. Add broccoli and cauliflower. Stir-fry 3 minutes. Cover; cook over medium heat 1 to 2 minutes or until broccoli and cauliflower are crisp-tender. Add bell pepper; stir-fry 1 to 2 minutes longer until pepper is crisp-tender.
