2 Cups small fresh broccoli and cauliflower florets (from 16-oz. pkg.)
1/2 Medium red or green bell pepper
2/3 Cup bottled Italian salad dressing
1 1/2 Cups torn fresh spinach
Hot cooked rice or linguine (optional)

Here is how you make Shrimp and Mixed Vegetable Stir-Fry:

Directions In large nonstick skillet, heat 1 tablespoon oil over medium-high heat. Add shrimp and shallots; stir-fry 3 minutes. Remove mixture from skillet; keep warm. In same skillet, heat remaining 1 tablespoon oil. Add broccoli and cauliflower. Stir-fry 3 minutes. Cover; cook over medium heat 1 to 2 minutes or until broccoli and cauliflower are crisp-tender. Add bell pepper; stir-fry 1 to 2 minutes longer until pepper is crisp-tender. Add shrimp and any accumulated juices and dressing. Stir-fry until hot and shrimp are opaque in center.
