How Do I Make Vegetable Wheel Barrels?

Here is how you make Vegetable Wheel Barrels:

First, preheat your over to 350 F, then wash your vegetables!Slice the red bell peppers in half length ways and remove the seeds. Slice the cucumber in half with the rind on. Cut off four cucumber slices and give them a straight edge, not much, just enough so they can stand up without being propped. Roughly chop the remaining cucumber.In the end of the bell pepper (not the top with the stem the other end) slice out a hole into which the cucumber slices will fit. Take the four cucumber slices and place one in each hole with the flat edge you cut facing down. When you're done, it should stand on its own and look like a red wheel barrel with the cucumber slices acting as the wheel. Now cut the florets off the broccoli stalk. Peel the large, main broccoli stem as you would a potatoe or mango, removing the fibrous exterior. Cut the peeled stem into chunks and place in the food processor. Add the cream cheese and light whipping cream to the food processor with the broccoli stem and pulse until you have a thick creamy sauce.Place the sauce in a bowl and add the onion soup mix, blending thoroughly. Add the fresh, clean broccoli flourets and the chopped cucumber and stir until fully coated in the sauce.Take the four long green beans and place one on either side of the stem end of your bell pepper/cucumber wheel barrels. The green beans should look like the handles of a wheel barrel. Once you have the green beans placed, fill the 'bowl' of the bell pepper with the saucy vegetable filling.Place the vegetable wheel barrels on a cooking sheet that has been coated in cooking spray.
