I just threw this together one night for supper. It has a different combination of ingredients than I've used together before, but it turned out suprisingly good. A very hearty and healthy meal.

The ingredients for Hearty Vegetable Stew are:

1 can Great Northern beans, undrained
1 can diced tomatoes and green chilies
5 mushrooms, sliced
2 small zucchini, sliced & steamed
2 broccoli crowns, steamed
2 cups baby spinach, steamed
1 jar Ragu Light no sugar added spaghetti sauce
1 tsp minced garlic
1 serving turkey pepperoni, quartered
1 chicken leg quarter (boiled, deboned, and shredded)
1/2 cup instant brown rice
Other seasonings as you prefer
1/2 cup lowfat (1%) cottage cheese
1/2 cup fat free mozzarella cheese


How Do I Make Hearty Vegetable Stew?

Here is how you make Hearty Vegetable Stew:

1. Wash and slice zucchini. Steam in microwave until just tender. Add to large Dutch oven. 2. Rinse broccoli crowns and cut into bite size pieces. Steam in microwave and add to pot. Broccoli should still be bright green in color.3. Steam spinach until just wilted. Add to pot.4. Add all other ingredients except for cheeses. Mix well, making sure to evenly distribute the spinach.5. Top with layer of cottage cheese. Sprinkle on mozzarella.6. Cover and bake at 350 degrees until bubbly in the center.**Note - I use a Pampered Chef Large Micro-Cooker to steam my veggies in the microwave. Also - we occasionally buy a 10 lb bag of chicken leg quarters, then boil, debone and freeze. That saves a lot of time when you need chicken for a recipe like this.
