Prepare couscous: Bring water, Smart Balance, and salt to a boil. Stir in dry couscous. Cover and turn off heat; allow to stand for 5 minutes. Fluff with a fork; cover until ready to use.Prepare vegetables:1. Set a medium pot of water to boil. Add sweet potato and simmer several minutes or until soft. Drain and set aside.2. Heat oil in a large pan over medium-high heat. Add onions and carrots to pan; cook, stirring occasionally, until onions become soft and translucent. (Do not brown.)3. Add garbanzo beans to pan, stirring to combine until heated through. Add sweet potatoes and season with garam masala, salt and pepper. Add stock.4. Cover pan and turn off heat.
