Heat 1 tablespoon of olive oil in a large pot, add onion, garlic, carrot, zuccini and red capscium, cook for a few minutes stirring regularly until softened. Remove from pan.Heat the remaining olive oil in pan and add mince, cook until browned. Return vegetables to pan and continue to cook for another 5 minutes, stirring continually.Add passatta and the stock cubes mixed with the water to the pan, stir. Add mushrooms and continue cooking futher until mushrooms are cooked.
