Here is how you make Summer Stewed Vegetables:

Saut? onions, peppers, and garlic until onion is almost soft. Add squash, cover, and cook on low to medium heat until squash start to soften. Add tomatoes, cut side down, so that they are touching the pan. Cover and cook for about 20 minutes, stirring carefully occasionally. The tomatoes will provide enough liquid to finish steaming the squash. Cook this to suit yourself.
