2 tbsp Low sodium soy sauce
1 bell pepper, cut in thin strips
4 scallions, minced
3 garlic cloves, minced
1 14oz can diced tomatoes, drained
2 tbsp packed brown sugar
2 tbsp rice wine vinegar
1/2 cup peanut butter
1/2 cup reserved noodle water

Here is how you make April's Vegetarian Pad Thai:

1) Place rice noodles in a large bowl, cover with boiling water. Stir till noodles soften, then drain. Set aside.2) Mix 1/2 cup of peanut butter with 1 tbsp olive oil and a splash of chili sauce. Set aside.3) Heat a tbsp olive oil in a large skillet over medium high heat. Add the tofu and stir-fry till lightly browned, about 5 minutes. Transfer to a bowl, and pour 1 tbsp soy sauce over. Toss to coat. Set aside.4) Heat a tbsp olive oil in the same skillet. Add the bell pepper, scallins, and garlic and stir-fry until softened, about 5 minutes. Add the tomato, brown sugar, rice wine vinegar and remaining tbsp soy sauce. Cook for about 3 minutes to blend flavors. 5) Add the tofu back to the pan.
