Here is how you make Veggie Bacon Cream Tomatoes:

Remove core of each tomato, cut tomatoes into halves. In 10" skillet, heat 1/2 tsp of oil, set tomato halves in skillet, cut side down, and cook until lightly browned, about 2 minutes. In small bowl, combine sour cream and crumbled cooked bacon. Turn tomatoes over carefully and spoon equal portions of mixture onto each tomatoe half. Add remaining 1/2 tsp of oil to pan, cover and cook until thoroughly heated, about 3 minutes longer. Set onto serving plate and garnist with parsley.
