1. Season fish lightly with pepper. In a 4-quart Dutch oven cook fish, carrots, celery, and snow peas in hot oil over medium heat for 2-3 minutes.2. Add broth or crushed cube with water, bring to a boil, reduce heat, simmer, covered until fish flakes when tested with a fork.3. Place mashed potato mixture in a small bowl. Carefully remove 1 1/4 cups hot broth from Dutch oven, stir broth into potatoes (mixture will thicken.)4. Divide mashed potato mixture among four bowls. Break fish into bite-sized portions. Ladle hot fish and vegetable mixture over potatoes. Season with salt and freshly ground pepper to taste. Top with Parmesan Cheese shavings.
