What Are The Ingredients For Leigh-La's Veggie Lasagna Recipe?The ingredients for Leigh-La's Veggie Lasagna are: 1 box oven-ready lasagna noodles2 tbsp EVOO 2 med. zucchinis cut in pieces 1 lg onion cut in pieces 1 green pepper cut in pieces 1 red pepper cut in pieces 2 cups brown mushrooms, sliced 1 head broccoli florets, chopped 3 cloves garlic, minced 1 tsp salt 1/2 tsp pepper 2 tbsp italian spices 1 pkg spinach thawed and drained 1 lb mozzarella cheese (shredded) 1 pkg ricotta 1 1/2 cups Parmesan cheese 2-3 cans crushed tomatoes 2-3 cans tomato sauce How Do I Make Leigh-La's Veggie Lasagna?Here is how you make Leigh-La's Veggie Lasagna: Preheat oven to 375.Grease 9X13 panSaute broccoli, onions, peppers, zucchini, mushrooms and garlic in olive oil until veggies are fork tender.Add two cans of the crushed tomatoes and one can tomato sauce to the mixture until consistency of sauce.Add salt, pepper and italian spices.Line bottom of dish with a layer of noodles.Add sauce over the noodles.
