20g butter (or buttery margarine substitute)
8 black peppercorns
1 bayleaf

Pre heat the oven to 180c (fan) 200c (non fan)Chop the onions, zucchini and olives. Take ? of the onion and keep to one side for the b?chamel sauce!!!Fry the onions, zucchini and garlic in the olive oil. Add the mince and fry for a further 10 minutes. Add the tomato puree, olives and water. Leave to simmer for 15 minutes (or until most of the water has reduced) Make the b?chamel sauce whilst the mixture is reducing.TO MAKE BECHEMEL SAUCE:place the milk in a small saucepan and add the , bay leaf, onion and peppercorns, heat over a low heat until simmering (DO NOT BOIL!) once simmered stain the milk into a jug leaving the bayleaf, peppercorns and onion behind. Place the butter in your now empty pan, return to the heat and melt the butter slowly (DO NOT LET IT BROWN!) add the flour and stir vigorously to make a glossy paste. Slowly add 25ml of the infused milk and keep stirring vigorously. Repeat adding the milk in 25ml stages until HALF is added. Switch to a whisk and still stirring briskly add the remaining milk ? KEEP STIRING/WHISKING until the consistency of the sauce you want is achieved. Stir in the parmesan cheese.Halve the mince mixture and place in the bottom of an ovenproof dish. Place the first sheet of lasagne over the mixture. Add 2 tbs of b?chamel sauce. Spoon the remaining mince mixture onto the sauce. Add the final lasagne sheet.
