Here is how you make Sarah's Veggie Meatloaf:

Mix the eggs, ketchup, bouillon, seasonings, and breadcrumbs together. Mix the ground beef and ground pork together. Combine the meat mix with the wet mix. Run all the veggies through a food processor until pulsed fine. Saute veggies in olive oil until soft, almost brown. The more brown the veggies, the more savory flavor the meatloaf will have. Let veggies cool before mixing in with the meat mix thoroughly. Shape into a loaf. Combine the ketchup, vinegar, and brown sugar then pour over top as the glaze.
