A very yummy vegetarian meatloaf adopted from another vegan blog. I can't find the original to give credit, I printed from my email and have been using that recipe but made a few changes to use what I had on hand. Makes 4 1/2 cup servings. I measure them out with a measuring cup and make mini loaves :)

2 cups Morningstar Farms Veggie Crumbles
3/4 cup chopped onion
1 Tbsp Canola or Olive Oil
1/2 Cup prepared Campbell's Tomato Soup (prepared with water)
1 Tbsp Tomato Paste
2 Tbsp Soy Milk (light)
1 tsp Salt
Seasoning (adobo, Mrs. Dash, or vegan Worcestershire)

For Topping:

1/4 Cup Campbell's Tomato Soup (not prepared)
1.5 Tsp Brown Sugar, 1.5 tsp unpacked


How Do I Make Veggie Meatloaf?

Here is how you make Veggie Meatloaf:

1. Preheat Oven to 400 degrees2. Saute onion in oil until tender3. Whisk together soup, tomato paste, soy milk, salt and seasonings4. Add tomato mix to saucepan with onions and heat till simmering5. Stir in frozen beef style crumbles and remove from heat6. Stir in breadcrumbs7. Spray baking pan or loaf pan with cooking spray, press meatloaf mix into pan or shape with your hands for mini loaves. 8. Whisk together topping ingredients and baste over top and sides of loaves. 9. Bake for 15 minutes (I usually throw a veggie like crocolli or brussels sprouts on the rest of the cookie sheet and roast them alongside)10. Remove from oven, flip loaves over and baste other side.
