1 cup quinoa
2 cups low sodium chicken stock
1 cup chopped/sliced crimini mushrooms
3 cloves garlic, minced
7 baby carrots, sliced
1/2 c. chopped onion
1/2 c. frozen peas
1 c. packed fresh spinach
3 T cilantro, rough chop
1 T coconut oil
1/4 tsp salt...or to taste
1 tsp pepper...or to taste

Here is how you make Mushroom and veggie Quinoa:

Heat coconut oil. Add in chopped onion, minced garlic, and sliced carrots. Sprinkle in salt and pepper. Saute until translucent. Add in mushrooms, saute until the start to soften a bit. Pour in chicken stock, and quinoa. Bring to a boil, then turn back heat to a simmer. (you may need to rinse your quinoa...read the instructions on your package). Simmer for approx 15 minutes. While simmering add cilantro, spinach, and peas to a bowl. After the quinoa is cooked pour it over the spinach and cilantro.
