Here is how you make Veggie Parmesan:

1) Preheat Oven to 350degrees.2) Slice eggplant and zucchini. Set Aside the veggies.3) Mix cottage cheese, basil, and spices in a bowl. Set Aside.4) Layer half of the eggplant slices into an 8X8 inch pan.
