1 cup sliced cremini mushrooms
1/2 cup fresh corn kernels
1 small zucchini, halved lengthwise and sliced (about 3/4 cup)
3/4 cup halved grape tomatoes
4 (7- to 8-inch) whole-wheat tortillas
4 ounces quesadilla cheese, shredded (about 1 cup packed)

Here is how you make Veggie Quesadillas:

Spray nonstick skillet, add onion and mushrooms to the pan with salt and pepper. Cook for a minute or two add zucchini and grape tomatoes, cook again for a few minutes until all the veggies are soft. Spray another skillet with cooking spray, lay down 1 tortilla and place 1/4 of the veggies in it on one half, top with 1 oz. of the cheese. Fold the quesadilla top over and cook for a minute or two, until the bottom is toasted, flip and cook the other side until it's toasted.
