Here is how you make MJ's Curried Veggie Quinoa:

This is what MJ said about her method: I chopped up a sweet potato and a zucchini and tossed them in olive oil and curry powder and a little sea salt and roasted them for about 10-15 minutes at 400 degrees. I sauteed some finely diced onion and garlic in some olive oil in the bottom of a medium sized pot. Then I added my stock to the pan and cooked a blend of white and red Quinoa.
