Butternut Squash, 1.5 cup, cubes
Peppers, sweet, red, raw, sliced, 1.5 cup
Water, 8 Cup
Chickpeas (garbanzo beans), 1.5 cup
Yves "Chicken" Veggie Tenders, one 170gram package (about 3.5 ounces)

Bay leaf, 2
Oregano, 2 tsp
Ground Coriander seed, 2 tsp
Cumin, 4 tsp
Turmeric, 2 tsp
Veggie bouillon cubes, 2

Flour, whole grain, 1 cup
Baking Powder, 2 tsp
Margarine, soft, 3 Tbsp
Soy Milk, 3/4 cup

Here is how you make Matt's Fabulous Curried Veggie Stew, with Dumplings:

Saute the onions, celery, garlic and ginger about 3 minutes. Add mushrooms and some salt and saute another 3 minutes. Add carrots, squash and peppers and cook another 5-7 minutes. Add water, chickpeas and spices. Simmer approximately 30 minutes, until the squash begins to disintegrate. Saute fake chick'n briefly in a frying pan, then add it to the stew. (If you're feeling lazy, don't bother to saute it first.) Taste the stew. You may need to add more spices since the amounts here are guesses. I usually cook by taste.Bring the stew to a boil while you make the dumpling batter. Dumplings: Sift together flour, baking powder and salt. (If you use whole wheat flour, you may need to add the wheat germ back in if it doesn't flow through your sifter.) Using two knives, cut in margarine. Stir in soy milk. Stir until flour is just moistened.Drop spoonfuls on the simmering stew. Cover tightly and cook 15 minutes. DO NOT PEEK! (Lifting the cover before they're done will prevent the dumplings from rising, and you'll have hockey pucks.)Remove bay leaves before serving.Makes approximately 10 one-cup servings.
