Strain, add 1 tbsp of the olive oil, toss to coat, and set aside. In a wok or large saucepan over high heat, saute galric and onion in remaining 2 tbsp oil until translucent. Stir in mushrooms and seitan. Add chang, carrot, scallions, cayenne, anise seeds, cumin, water and soy sauce and cook until done, about 10 minutes. Add noodles and sesame oil; cook 10 minutes.
