1/2 cup finely chopped onions
2 cloves minced garlic
1/2 cup finely chopped celery
1 cup brown rice, cooked
2 T La Choy soy sauce (any brand will do, but I prefer the flavor of La Choy)
8 leaves of iceburg lettuce

Here is how you make Simple Lettuce Wraps:

Chop chicken breast into small pieces (approx. 1/2 cm cubes), and brown on the stove with 1/2 T olive oil. Once cooked, remove chicken and set aside. Put remaining 1/2 T olive oil in the frying pan and add the onions and minced garlic. Cook for about a minute and add the chopped celery. Cook for another minute before adding the cooked rice, and chicken. Stir-fry all ingredients until well mixed. Top off with soy sauce and stir-fry for another few minutes.Serve on leaves of iceburg lettuce. Approx. 1/2 cup and 2 leaves of lettuce per serving. This makes a great light meal!
