2 medium zucchini sliced in 1/4 " thick slices
1 large onion sliced 1/4" slices
1 10 oz package frozen broccoli
1 grilled skinless boneless chicken breast, chopped
2 TBS olive oil
1 clove garlic, minced
salt to taste
pepper to taste
oregano to taste
1 C parmesan cheese.

Here is how you make Skillet Zucchini:

In a deep skillet add zicchini, onion and broccoli. toss with olive oil, salt, pepper and diced garlic. Cover and simmer, stirring often, over medium heat. You don't want to brown the zuccini, more like steam it. (The frozen broccoli will provide plenty of steam)The zucchini and onions will become tender and semi-transluscent, add chicken and stir.When veggies are tender and chicken heated through, sprinkle parmesan chese and oregano over the top, do not stir.
