2 tbsp White wine
Juice of 1 lemon
1 tbsp Olive oil
1 x Medium onion
2 x Cloves of garlic
14oz *425g) Can of chopped tomatoes

Here is how you make Baked Fish Provencal:

Put fish fillets into a shallow, ovenproof casserole and pour the white wine and lemon juice over them. Leave to marninate for at least and hour. In the meantime, heat the oil and soften the onions and garlice. Remove the fish from the marinade, drain and add the marinade to the onion and garlic. Let it bubble and reduce a little, then add the tomatoes and herbs, and season to taste. Wipe the casserole dry, lightly oil it, put in the fish fillets, pour over the sauce and bake at 200 deg C (400 deg F/gas 6) for 20 minutes.
