2 lbs cod or other white fish
1 tsp minced garlic
1 tsp finely minced shallot
1/4 tsp tarragon
1 Tbs dried parsley

dash nutmeg
dash pepper

3/4 cup plain bread crumbs

Here is how you make Herb Baked Fish:

Lightly grease shallow baking dish with butter. Melt butter in pan and cook garlic and shallot for a minute or two. Remove from heat and add rest of seasonings (NOT the bread crumbs). Pour half the mixture over the fish. Add 3/4 cup bread crumbs to rest of mixture and sprinkle over fish.
