Lay salmon fillet, skin side down on EVOO on foil. Drizzle the remaining 1/4 teaspoon of EVOO over fillet, coat fillet in EVOO. Thinly slice garlic cloves and layer slices over the top of the salmon, covering the whole fillet. Sprinkle with 1/4 teaspoon each of salt and pepper (just enough to cover top of fillet, so you may use less). Sprinkle with about a teaspoon of basil (you can do parsley too if you would like). Top with fresh sprigs of thyme (about five sprigs). To finish, squeeze about 1/2 lemon of juice over fillet, and then tuck lemon next to the fish. Wrap fillet in foil to form a "tent" around the fish, not too tight so fish can "steam" in the lemon juice when in the oven. Pop in the oven directly on the rack or put in a shallow glass baking dish. Cook at 375 or 400 for about 20 - 30 minutes.
