Preheat oven to 400F. Remove skin from halibut using VERY SHARP knife. Salt and pepper to taste. Lay out parchment paper (12"-15" pieces) for each fillet and put seasoned fillet in middle of paper. Add 2 slices of orange and 3 sprigs of thyme to each fillet. Wrap in a 1/2 moon fashion making sure sealed well and place on baking sheet.
