Shrimp, cooked, 36 oz
Asparagus, fresh, 3 cup
Mushrooms, fresh, 1 cup, pieces or slices
*Snow Peas, fresh, 0.5 cup
Shallots, 2 tbsp chopped
Onions, raw, 1 medium (2-1/2" dia)
Sherry, dry, 4 fl. oz
*Soy Sauce, 4 tbsp
Peppers, sweet, red, raw, sliced, .5 cup
*Black Bean Garlic Sauce, 4 tbsp
Granulated Sugar, 3 tsp
Corn Starch, .25 cup
Chicken Broth, 1 cup (8 fl oz)
Celery, raw, 1 cup, diced


How Do I Make Spicy Black Bean Stir Fry?

Here is how you make Spicy Black Bean Stir Fry:

Put the shrimp in a large mixing bowl. Cover the shrimp with Sherry (or any cooking wine/rice wine vinegar will do). Add the soy sauce and a pinch of red pepper flakes (optional). Also throw in a tbsp of corn starch. Stir it up and let sit in the fridge for about half an hour. While that's sitting, start cooking up your vegetables. Fry them very lightly in olive (or your other favorite) oil. I left all these veggies quite crunchy because we like the texture and really just wanted to heat them up to keep most of the nutrition in tact. Add in this order to a very large covered skillet - Onions, Shallots, Mushrooms, Celery, Snow peas/Red pepper. Cook these until they reach your desired tenderness, covering the skillet with a lid when required. Once the veggies are at the desired tenderness, add the black bean sauce, sugar and cornstarch, as well as the chicken broth. If you don't have chicken broth, you can use any other broth and it will taste just as delicious. Cook this mix up until heated.Add the shrimp, complete with all the juice that collects at the bottom of the bowl. Add the asparagus (which should be trimmed to 1" pieces).Cook it up, covered, until everything is hot and still crunchy. Serve this over your favorite rice or noodles.Hope you enjoy!
