What Are The Ingredients For Creamy Haddock with Broccoli Recipe?The ingredients for Creamy Haddock with Broccoli are: 600ml semi skimmed milk (semi skimmed is about 1.5% fat)5 tbsp cornflour (cornstarch for the Americans) 1 small onion, cut into 6 wedges 1 bay leaf 2 long strips of lemon peel 200g smoked haddock 250g haddock or cod 300g broccoli, trimmed and cut into florets 20g gruyere cheese, finely grated 1 tsp english mustard salt and freshly ground black pepper TOPPING 15g fresh, white breadcrumbs 10g gruyere cheese, finely grated 1/2 tsp dried parsley How Do I Make Creamy Haddock with Broccoli?Here is how you make Creamy Haddock with Broccoli: Place 4 small, shallow flame proof dishes on a baking tray. Make the gratin topping first by mixing the breadcrumbs, 10g cheese and parsley and set aside.Mix 5 tbsp milk with the cornflour in a small bowl until smooth and set aside.Pour the rest of the milk into a large saucepan and add the onion, bay leaf and lemon peel. Cut the fish fillets in half, place them skin-side down in the pan and bring to a gentle simmer over a medium heat.Cook for 3 minutes, basting the fish occasionally with the milk until only JUST cooked. Off the heat, cover the pan with a lid and leave to stand for 5 minutes, the fish will continue to cook.Preheat the oven to 220cWhile the fish is cooking, half fill a small pan with water and bring it to the boil. Add the broccoli florets, bring the water back to the boil and cook for 2 minutes. Drain the broccoli, then rinse in a sieve under cold running water and drain again.Place a colander over a clean non stick pan and drain the fish, collecting the milk in the pan. Stir the cornflour mixture into the warm milk and heat gently over a medium heat until it has thickened, stirring continuously. bring to a simmer, continue stirring until it is thick & smooth. Stir in the remaining cheese and mustard then cook for another 2 to 3 minutes, stirring. Season to taste and stir in the broccoli florets.Flake the fish into chunky piece , throw away the skin, onion, bay leaf and lemon peel. Add the chunks of fish to the pan and stir gently.Divide the fish mixture between the dishes.
