1 small onion chopped
1/2 C chopped green or red bell pepper
2 cans mushroom stems and pieced, drained
1/4 tsp black pepper
2 Tbsp light margarine, melted
2 C reduced fat chedder cheese, shredded
3 C egg substitute
2/3 C fat free half and half

Here is how you make Breakfast Supreme Casserole:

In a large skillet cook the sausage, onion and peppers. Drain fat if necessary. Add mushrooms and pepper, stir and set aside.Pour melted butter into an ungreased 13X9X2 baking disk. Spread 1 C of cheese over bottom of baking dish. Pour egg substitute over cheese. Top egg and cheese with the sausage and vegetables. Pour cream over top. Sprinkle with remaining cheese.Bake at 325 degrees for 35 - 40 minutes or until set. Let stand for 10 minutes before serving.Notes: May use 1/2 C fresh mushrooms, however, cooking time may be longer due to high moisture content in the fresh mushrooms. If freezing, allow to cool completly. Place individual pieces on a cookie sheet covered with wax paper and freeze. Once completely frozen, transfer to a freezer bag (either individual bags or one large bag).
