Growing up as a kid I loved the noodle casseroles my dad would make. This one is made out of shirataki tfu noodles and surprisingly is very good. 1 can fit and active cream of mushroom soup or any reduced fat
2 oz nuefchatel cream cheese
3 tbsp reduced fat parmesan cheese topping
1/8 tsp black peper and cayenne pepper
2 stalks celery, chopped
1/2 med onion, chopped
8 med. white mushrooms, chopped
1 1/4 cups frozen peas and carrots
1 6 oz can tuna rinsed and drained
1/2 cup water

Here is how you make lIGHTENED UP TUNA NOODLE CASSEROLE:

Preheat a 12 inch skillet with cooking spray.Preheat oven to 375.In skillet add chopped celery, onions. Cook for 2-3 minutes. Add mushroms and 1/2 cup water to steam saute the veggies. Add black pepper and cayenne, drain an rinse tuna add to pan. Cook for 1-2 minutes until heated through and spices are well combined. Add cream cheese, let that melt into the tuna mixture. Add shirataki noodles and stir to combine well. Stir in soup and 1 tbsp of the parm topping.
