3-4 large carrots, sliced
1 cup thinly sliced celery
1 green pepper, chopped
2 tbsp finely chopped parsley
1 1/2 cup low fat cheddar cheese

Here is how you make Baked Lentils with Cheese:

Preheat oven to 375 degrees Fahrenheit. Combine ingredients in a 9x13 inch baking pan. Rinse lentils and mix with seasonings (except fresh parsley), onions, canned tomatoes, water and garlic. Cover tightly and bake for 30 minutes. Uncover and stir in carrots and celery. Bake covered 40 more minutes. Then stir in green pepper and fresh parsley.
