Here is how you make "Mac" and Cheese:

Dismantle and cook cauliflower until it's about half done. I roasted it, you can cook it however you want. While the cauliflower is roasting, sautee garlic and onions and mix milk, eggs, mustard, hot sauce, salt, pepper, and tuna together in a large bowl. Set the bowl of milk mixture aside. Once the cauliflower is ready, put it in a large pot on low heat with butter,onions, and garlic and toss to coat until butter is melted. Add milk mixture and stir constantly until cheese is melted and thoroughly mixed. Transfer to a large baking dish that has been sprayed with Pam and bake for for 20 minutes.
