1 c polenta (or yellow grits or cornmeal)
16 oz. Fat free half and half
16 oz. water
2 tbsp EVOO
1 tsp unsalted butter
1 sm onion, finely chopped
1 clove garlic, minced
1 lb shrimp, peeled and deveined
1/4 tsp salt
1/8 tsp pepper
1/2 c Shredded Parmesan Cheese or other cheese


How Do I Make Lowcountry Shrimp and Cheese Grits?

Here is how you make Lowcountry Shrimp and Cheese Grits:

1) In a medium saucepan, bring half and half and water to a boil. With liquid boiling, sprinkle in polenta while stirring liquid. Stir in salt and keep stirring until entire mixture boils again. Reduce heat to maintain a steady simmer and cover. Stir every few minutes until thick and tender (traditionally polenta is stirred constantly while cooking--go ahead and do this if you like, but it's not absolutely necessary). This will take about 7 minutes. Turn off heat add cheese, stir and cover with lid while preparing shrimp.2) Meanwhile, heat olive oil and butter in a skillet over medium heat. Saute onions until tender, then toss in shrimp. Season with salt and pepper, and cook 4 to 5 minutes, or until shrimp turn pink. Stir shrimp mixture into grits, and continue cooking for a few minutes. Or you can place the cheese polenta on plate and top with the shrimp. Serve hot.
