6 oz white wine
1 can coconut milk
1 Tbsp chili powder (more or less to taste)

Here is how you make Dungeness Crab Coconut Curry:

Prepare rice to your liking (recommended but optional: add a couple ounces of shredded coconut during cooking). Set aside for service.Heat a large skillet with coconut oil over medium-high heat until oil is shimmering (above 300 F). Add diced onion and salt, and stir until onion starts to take color. Add salsa, and cook 5-10 minutes, or until everything's lost about half its volume. Add garlic, ginger, and coconut, and cook another 5-10 minutes. Grind the spices in the meantime.Push everything to the edges of the pan and toast the spices, then stir to coat. Add the white wine and cook down for a couple of minutes, then add the coconut milk, stir to combine thoroughly, and cook until the liquid has lost about 1/3 of its volume and tightens up noticeably.Turn the heat down to a low simmer. Start adding chili powder, tasting with each addition. If it tastes "murky" or "heavy", add more wine. If it tastes at all "flat", don't be afraid to add salt. When you're ready to serve, fold in the crab meat and ladle over rice. Serving Size:?makes four 1-cup servings
