hot sauce to taste
1/2 cup green peppers chopped

1 cup sliced fresh mushrooms
2 tbsps flaked cooked salmon, or bits of ham
1 oz chedder cheese, shredded
1 green onion, finely chopped both green and white parts

Here is how you make Confetti Fritatta:

Wipe a cast iron or heat proof frying pan with oil. Bring pan to a medium high heat. Add peppers and mushrooms and cook until just beginning to brown. Remove to a serving platter.Season eggs with salt, pepper and hot sauce.Reduce heat of pan to medium, add eggs. Turn pan to totally coat the bottom with the egg mixture. Preheat broiler.Sprinkle peppers and mushrooms over egg distributing evenly over the fritatta. Sprinkle on ham or salmon, cheese and green onions.Put pan under broiler and allow cheese to melt and top of fritatta to begin to brown.
