Mix well for a smooth consistency. Use a nice hot non-stick griddle (you shouldn't need any cooking spray) and drop 1/4 cup mixture onto griddle. Cook until bubbly then turn and cook until done, (approx. 3-4 minutes per side). Serve immediately. I like to top mine with low cal trans fat free buttery spread and about 1/4 cup unsweetened applesauce with a sprinkle of cinnamon. Makes approximately 20 4-inch pancakes.
