2 lbs mussels
2 cloves of garlic
1 clove of garlic, minced
6 tbsp Smart Balance(or 4 tbsp butter and 2 tbsp sun dried tomato finishing butter)
1/2 cup grated Parmesan cheese
3 tbsp olive oil
1 lb. spaghetti


How Do I Make Garlicky Mussels Over Pasta?

Here is how you make Garlicky Mussels Over Pasta:

1. Bring a pot of salted water up to a boil. 2. In a large saute pan, heat the olive oil and the garlic cloves. When the garlic starts to turn golden discard the cloves, about 2 minutes. 3. Add the mussels to the oil. Cover the pan and saute for about 3 to 4 minutes, shaking the pan occasionally, or until the shells open. 4. Remove the pan from the heat and discard any shells that did not open. Pour into a bowl and set aside. 5.Place the saute pan back on the heat and melt the smart balance with the minced garlic, over medium-low heat, about 2 minutes. 6.Drop the pasta in the boiling water and cook until the pasta is al dente, about 2 to 3 minutes. 7. Add the sauteed mussels with their liquid back into the pan. Saute for 1 minute. 8. Remove the pasta from the water, drain and place directly into the saute pan. 9.Remove from the heat and toss the pasta with the mussels, finishing butter (if using) and grated cheese.
