2 cups water
3/4 tsp salt
6 tbl. extra virgin olive oil
1 large onion finely chopped (2 cups)
1/4 tsp black pepper
3/4 pound kale
3/4 pound dried elbow macaroni


How Do I Make Pasta with Lentils and Kale?

Here is how you make Pasta with Lentils and Kale:

Serves 6. Simmer lentils in two cups water with 1/4 tsp salt. 20-25 minutes. Remove from heat and season with salt. While lentils are simmering, heat 1/4 cup oil in a heavy skillet till hot but not smoking, then saute onion with pepper and remaining 1/2 tsp salt, stirring, one minute. Reduce heat to low and cook, covered, stirring occasionally, till onions are soft and golden, about 20 minutes. Remove lid and increase heat, stir frequently, cook another 5-10 minutes. While onion cooks, discard stems and center ribs from kale. Cook in boiling salted water 5-8 minutes. Transfer to colander to drain, pressing lightly. Keep pot of water at a boil, covered. Coarsely chop kale and add to onion along with lentils including the lentil cooking liquid. Simmer, stirring, one minute. Season. Add pasta to kale cooking liquid and boil till al dente. Reserve about 1 cup liquid, then drain. Add past a to lentil mixture with about 1/3 cup of cooking liquid and cook over high heat, tossing, 1 minute.
