Combine remaining ingredients and simmer slowly until all is done. This can be done in a slow cooker for a few hours, definitely not an all day thing. Season to taste - I tend to put more salt and cumin than the average person.To serve, I love to put a mound of chopped tomato, avocado, onion, jalapenos and cilantro - kind of a deconstructed quacamole in the center of the bowl and pour soup over it, maybe a squeeze of lime over the top.
