Cook Brown Rice according to package directions. Dice Onion, Celery and Banana Pepper. In small skillet, heat Olive Oil. Saute the Banana Pepper, Onion and Celery. Cut Catfish Filets into 3/4 inch slices. Coat with HALF the spices, set aside. In a large saucepan add Diced Tomoates, Chicken Boullion, Hot Pepper Sauce and rest of the Spices. Bring Sauce to a boil, then add the Catfish. Cook over medium heat for 5 to 8 minutes or until fish is opaque all the way thru and flakes when pulled apart with a fork.
