Here is how you make Mee-Maw's Salmon Cakes:

Drain the canned salmon. "Clean" the fish by removing the non-meat pieces with your fingers and throwing "grey" pieces away. Then, lightly beat egg and mix egg and other ingredients into the clean salmon. Mix by hand and make into hamburger style patties. Cook in oil in a cast iron skillet on medium low heat with a cover until golden brown on one side, flip to the other side and repeat. It takes 25 to 30 minutes.
