heat oven to 425 degreesmix together panko, parsley, lemon zest. drizzle with EVOO and set aside. salt & pepper the salmon to taste. coat the salmon with mustard. press the panko mixture on top of salmon. mustard helps the panko stickcook for 22-25 minutes. can serve with lemon wedges if desire. note: this is not exactly how barefoot contessa cooks it, but this is the way I did it.
