2 large eggs
2 Tb dried parsley
1/2 cup Progresso Italian style bread crumbs
Lemon pepper seasoning to taste
1-2 Tb extra virgin olive oil to pan fry patties (depending on size of pan)


How Do I Make Super Quick Salmon Patties?

Here is how you make Super Quick Salmon Patties:

Drain salmon and place in bowl. Mash up salmon with a fork and then add 2 large eggs. Mix together with fork and add bread crumbs 1/4 cup at a time (you might not need all of the half cup). Add parsley and lemon pepper seasoning. Cover bottom of frying pan with olive oil (you just need enough to let the patties slide when they are browning). Heat pan until oil sizzles when you add a tiny bit of salmon. Use scoop (I use a cookie scoop) to form patties and place in pan. Watch the edges of the patties and when you start to see them browning, flip them over and let cook until brown on other side.
