rinse the salmon and pat dry. Rub the brown sugar and seafood rub into the salmon filet. Bake in a 450 oven for 15 to 20 min or until firm and bounces back to the touch. Remove from the oven and remove any skin. break salmon into chunks and divide evenly onto 4 tortillas. In a mixing bowl, empty a bag of spinach and add 2 to 3 Tbsp of onion vinagrette and toss.
