Here is how you make Fish Cutlets in Wine Sauce:

Heat half the butter in a flameproof serving dish, put in the fish and sprinkle with the onion, half the capers, salt and pepper. Add the wine, cover and cook in 350 degree (F) oven for about 20 minutes or until tender. Heat the remaining butter in a pan, add the flour, cook for 1 minute. Gradually blend in the liquor remaining in the dish in which the fish was cooked and stir until boiling. Add mustard, parsley, remaining capers and beaten eggs.
