In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and 2 tsp oilive oil. Season mahi mahi with salt and pepper and place them into the dish. Cover and refrigerate for 20 minutes. Heat 1 tsp oil in a large skilit. Saute fish for 4 to 6 minutes each side, turning only oncce. Remove fillets and keep warm.
