In a medium pot, place olive oil in pan. Heat over medium-high heat 1 minute. Add onion and garlic, cook, stirring ocassionally, 6 minutes.2. Turn heat down to medium. Add rest of ingredients. Place lid on at an angle and cook for 25-30 minutes.Serve over baked fish, whole wheat pasta or spaghetti squash. To bake the squash, heat oven to 375*. Carefully cut squash in half. Remove the seeds. Spray a cooking sheet with olive oil spray. Place squash cut side down on baking sheet. Pierce back of squash 3 times. place in oven and back 45 minutes. Remove from oven and carefully turn over. With a fork, scrape sides of squash towards center of squash. Season with a small amount of salt and freshly cracked black pepper. You may add a drizzle of olive oil if you like.
